The Pacific Halibut is the largest of all flatfish species and can stretch up to 8 feet long, 4 feet across and can weigh over 600 pounds. Halibut were originally named "haly-butte," meaning - "the flatfish to be eaten on holy days." Fish are long-line caught, primarily in the waters of Alaska and British Columbia. A quota system, which has become the model for fisheries management and sustainability, protects this species.
