The first shellfish caught off the North pacific Coast by early settlers was the Dungeness crab. Very tender, flaky white meat and a sweet flavor characterize the Dungeness. Some Dungeness devotees will tell you the only way to serve this superior shellfish is in its purest form - fresh cracked with nothing more than melted butter, but this crabs versatility makes for a wonderful variety of dishes including Crab Cakes, cioppino, chowders, crepes, quiches and salads.
